I understand that wiping your device will restore the phone's settings. Does it also purge previously deleted messages (email, SMS) still "stored" on the phone?
It will delete all data from the device. You will need to log into your BIS account and remove the account. If not, mail to that account will still be delivered to the device.

Thank you for the quick response. That makes sense about the email. What about SMS? I've heard that even though an SMS is deleted it is still stored on the phone. How can I be sure that a wipe will delete everything?

I've been frequenting this forum for a little while now (couple of days or so) and I have never seen this.
I will give you my personal experience. I have wiped hundreds of devices using the security wipe and I can assure you all of your SMS messages/email messages/data/settings will be deleted.
If you're paranoid and want to take further action, use JL_Cmder or BBSAK and wipe the device, including the OS.
