Default Hiding messages, Via SIM

Hello all,

She has something really similar to the Blackberry bold

Long story short i think my wife of 11years is deleting her
text messages, just recently i randomly looked through her
phone and some text messages just didnt add up and im getting
pretty scared.

Just for some assurance is there anyway i can somehow make it to where
it saves all the inbox/sent SMS text messages to another folder?
She has a xxGB sim card and i noticed if you press options at the sms screen there is an option to leave SMS messages on sim card or something and i changed that to yes but it didnt put any new messages on it?

Maybe like somehow make it send all her messages to my email?

Or if anyone else has other solutions, they will be really appreciated.

I noticed a setting to save sent messages
