I don't know about iPad syncing as it's really not designed to be synced with anything but a Mac.
As for Mac <-> BlackBerry syncing, always backup your Mac before syncing. iSync to your MobileMe account is ideal. Then turn off syncing to MobileMe to protect that data stored on the iCloud. Additionally, a backup of the BlackBerry via Desktop Manager on your Mac is a good idea. After that is done you're ready to do a 2-way sync with your BlackBerry. If data is lost on either device you have fresh backups to restore.
Mac <-> BlackBerry syncing is supported but not perfected. When you set Desktop Manager for a 2-way sync and configure contacts for 2-way, be very careful about the settings. Neither device should be erased so if you're getting a warning about that, quit and recheck the settings. As a Mac user the iPhone is ideal for keeping contacts and appointments up to date. BlackBerry syncing is only a year old (or less) and is just as tricky as syncing a Nokia phone or some other brand of phone. If you're going to use a BlackBerry with your Mac you have to be ready for glitches. I keep my Mac contacts separate from my BlackBerry contacts. I back them up to a GMail account created primarily for this purpose and for syncing with iCal. To update my Mac contacts I email the contact to myself on my computer as a vCard. It's not wireless and it's not ideal, but its easy and it keeps things updated but separate.
