All data is stored in the SQL databse. You should backup this database regularly. We do a full server backup once a week with our 40 users.
By "memo" I am assuming you are using the Outlook term. If not, ignore the following:
Backing up and Restoring data per user, should be done through the exchange server to make life easier. You could use exmerge utility with exchange and if you are using Exchange 2003 you can utilize the Restore store.
If you are not using Exchange, maybe someone else can assist here.
