Is there a way with the 7100t model of blackberry to create a central DB spreadsheet that is secure, editable by multiple blackberrys, and is constantly sync'd between devices?

Right now, it's called an "Executive Assistant" or a "secretary." It's old school, I know. Everyone emails him/her the updates, she reconciles everything into a master file, then emails a new copy out once or twice a day. We do something just like that in our sales department for a regional territory managers.

This person can also do dual duty. You email that person a request to send you file X-Y-Z.doc with the "L-M-N-O-P" updates and you get the file in your hand within a few minutes. We don't quite have the electronic equivalent yet.

Or just turn the db into an online database, and have a secure login based in html. So anyone with th login details and a web browser (like on a bb) can modify the information.
