Default Swap Blackberry tariff to use own BES ?

I'm assuming if I have a blackberry on vodafone with their usual Blackberry Internet service (10 a month depending on the voice tariff) I won't be able to associate the device if I install my own BES EXPRESS server?

I'm therefore guessing that I'd need to have some other tariff, but which? Vodafone don't seem to list it unless I'm looking in the wrong place and calls to customer services were met with a lot of "uhs" and "ahs"

Is there some kind of magic vodafone uk number to phone which has people who actually know about blackberry ?

You need to get your BIS plan upgraded to the BES plan (or BlackBerry Enterprise Server plan.) Some carriers in the UK will not do this. (Not sure which ones though.)
