Yes that should work. Although I usually had some formating problem when I have done that. Like the phone number or address fields getting switched around. i.e. Fax number in the cell phone field etc. Since you are going from BB to BB you may not have this issue.

I do not do the wireless sync so I am not 100% on this, but I believe this is disabled by default with the USB cable, and can only be done though the BlackBerry service. The phone companies usually disable any features that do not use their network and let them charge you more.
So go the SIM route. You could also try taking it back to the store you bought it and ask them to transfer the data for you. I believe Cingular and Verizon both do this even if the old phone is from another carrier.
