What software to most people use to synch with their blackberry? Outlook?

For the personal user, I'd agree that Outlook is the majority.

For corporate usage, I'd estimate that it's somewhat equally split between Outlook/Exchange and Lotus Notes, with a small percentage of corporate users still using Novell Groupwise.
