Default How to disable data connection on 8707g?

Depends on what you mean. Go to options > mobile network > data services and change to off. Is that what you are looking for?

This feature became available with ver 4.1 OS, I think. If you have an older OS and don't see this function, that is the reason.

If you have this feature, turning data off does not disable voice. But you likely will receive backlogged email and maybe pushed content when you turn on data again. (I've never done it and so can't say first hand what will happen.)
