Default Personal Email & Direct File Access?

Hi, I apologize if these questions have been answered a thousand times, and if they are could you please direct me to a guide.

I got my first blackberry today, it's an 8800 which I plan on using as my primary phone and for mobile site testing.

I don't belong to an organization that has enterprise mail, so I need to connect via IMAP or POP3, how do I do this? I can't seem to find this option, the setup wizard has no option for this, it just asks me if I have an enterprise password / details.

How do I access the device directly? I use OSX so I installed PocketMac which allows me to install programs and synchronize (although this breaks on email for some reason). I want to update my wallpaper and put on a custom ring tone. This is all very low priority, as I could install the blackberry software on my windows device and be done with it.

P.S. How do I update the OS?

Is there an "advanced users" guide which goes step by step through everything I should know that reads through in about an hour?

Okay, at the risk of sounding silly once I turned on data everything fell into place, leaves me with the following issues:

For some reason I get copies of emails I send out (both via blackberry and via my computer) in my blackberry inbox, how do I stop this from happening?

I still can't figure out how I can connect directly. I'm worried about purchasing an SD card if I couldn't access it later.
