Is there any way to customize the convenience key to something that's not on the list in Options\Screen/Keyboard?

I want to set it to turn on the speakerphone. Is this possible?

The $ key activates the speaker phone from the key pad. Is there a reason why this won't work and you need the convenience key to do it?
