Default Address book

Can someone direct me to a primer on the address book?

Or, can someone answer a few questions I have?

1. I have numerous categories set up in my address book, with one of them set up as the default category. When I click on a letter to search for a specific name it automatically pulls all (or so it seems) the addresses in my address book into this default category; the name at the top indicates I am still in the default but names that I know aren't in that category show up. How can I get it to search just in the default?

2. Is there a way to configure so it searches in more than one category?

3. Failing that, is there a way to either eliminate all categories, or just have is search in all categories?
