Is there a way of doing this like the 8700? And hiding them?

yeah, the BlackBerry button left of the trackball.

Also, under the Zen theme, the first five icons will appear in the Today's screen. I suggest you not to put any icons that you can directly reach via keyboard shortcuts (M, L, F, K, A, T...)
