Default user settings stored on server?

Are the settings like your bookmarks and sound profiles stored on the server or the device? The reason I ask is I just swapped out a 7100 series for an 8703 (both Verizon) and all my settings transfered. Did our tech guy do something different or is it all just stored remotely?
