is there a shortcut for alt RACE on the 8800?(Pearl has this shortcut)

Also, with the pearl, when the phone was locked, you could hold down the # button to change the profile from loud to vibrate, is this feature available on the 8800 as well?

Try alt+EACE.

and no to the second one on changing profiles.
