MacBook Pro syncing -

I have a 7250 and I'm syncing with my MacBook Pro (entourage) but having a very bad experience. it seems to stem from Catagoires in my entourage. I spend hours getting things right on the Mac/Entourage and then when I sync to the blackberry things go haywire. I am also syncing with an exchange server at work which is our mail server. two questions;
1. does anyone know how to export contact data and have the contact retain the catagory after export. that seems impossible. I can easily export but all the catagory data is lost for each contact.
2. how can I easily delete and start over with contacts on my blackberry? the only option I can find is to delete one contact at a time.
I have 2000 contacts - maybe I've overloaded the blackberry?
experts with ideas? My IT guys are done with my "dingleberry".....help!
