Are you talking about AutoText or SureType? There is a difference, and a number of recent threads have been confusing the two.
AutoText is in Settings > Options > AutoText. You do not turn it on/off. The default entries are mostly commonly misspelled words. You can create entries whereby you type a specific sequence of keys and it converts the sequence to a predefined text (can be as short or long as you want).
SureType (71xx models) uses a predefined wordlist as well as a Custom Wordlist and has settings for how SureType learns. The Custom WordList is found at Settings > Options > Language > Input Options > TRACKWHEEL > Custom Wordlist. You can edit entries or clear the entire list. You can change SureType settings in the Input Options page. To turn on/off, start a new email, click TRACKWHEEL, and there will be an option near the bottom of the menu to turn on MultiTap or SureType, depending on which one is currently active.
There are other threads talking about shortcuts to all of this, but this is how I handle these functions.
