At this moment, there's no way to make it do that by default. Not even on my BlackBerryOS 220.127.116.11. (Another benefit though when used with BES or BES hosting, I can now select between multiple Outlook Inboxes if I want -- I have the entire Microsoft Outlook folder tree accessible on my BlackBerry now if I want)
A workaround can be to Alt+Esc out of the Mail and then Alt+Esc to go back. That will make it remember the last state. Which means, you can't Esc out of it, and which means you can't launch it from the main screen. But this is good when you need to switch between Mail and another application, and you don't want the Mail software to reset itself to the default state while you're trying to multitask.
