I am having the same issue! I didn't see the option on my BES server either but I do see a Deleted Items folder under Folder Redirection. I just can't click in it.

Yes. Since Wireless Email reconcile is on, they get deleted from the BB as well. You can turn it off and he should be fine as along as he doesn't synchronize with the desktop application.
