I would try an older simulator. Which one are you running and what theme are you looking for?

The 4.0 simulator (maybe it was 4.0.2) has the most phones and has different variations of the 7100 with different themes. All the 72xx, 75xx and 77xx phones are running the orignal RIM theme.

If you need something like Orange or Vodafone then you'll have to do it like was mentioned above.
