which will be the best way to migrate?

example:
-Migrate the mailbox Exchange 2003/07/Domino to Exchange 2010
-Once the mailbox have been migrated, add the user to the new SQL database.
-Remove the user from the previous SQL DB

BES version 5.0.3 over Windows 2008 R2

All the system will be virtualized over VMW (ESx 4.1 update 1)
