I called RIM TSupport and they advised the following regarding Desktop Redirector message routing. I'm not an Exchange Admin, so I will take the info to my team, but I thought I would post it here in case anyone else can benefit from the info or make any sense of it.

RIM advised to check the Exchange email inbound/outbound queues.
We should be able to go to the Network Add option and look for any users who show messages routing to the following:

etpXX.etp.XX.blackberry.net (where the XX is some number of a server)

If the blackberry.net address shows in the inbound/outbound queue, the user is using Desktop Redirector for message routing.

If I didn't use the correct lingo, sorry. I'll get in touch with our Exchange admins and have them clarify the above steps.
