If you go to Options > Advanced Options > Default Services (or Message Services) you can set it there. Now the BlackBerry will automatically use the e-mail account you last used for a particular contact, as well as that same account where an e-mail was recived. So if you have Gmail as the default and received an e-mail via a Yahoo account, if you reply to the e-mail it will use the Yahoo account. You will need to manually change it.
