Without wiping the phone the best way to do it is hook the phone to your computer and in desktop manager then do a back up/restore and pick advanced. Looking at advanced you should see two windows, the one on the right is your device. Find the address book/calender you want to empty, click on it then choose clear.

You indicate you have TMO which means the email setup is on your phone. Just go in "setup/Internet email" and delete the email accounts you no longer want. You can also add any new ones you do want.

As for the messages, o into messages and in the option menu chose "delete prior". This will delete all messages prior to the date you chose...
