i´v got BES 5.0.3 with some blackberry devices properly working.
But some users created new folders with e-mails in their inbox outlook 2003 but those emails do not appear in the blackberry devices. The folder wether is visible.

How could i see those emails in the blackberry device?

You need to set those folders up for redirection to the handheld.
This can be done via BAS or from the handheld itself.

The BES administrator's documentation covers Folder Redirection settings.
(Yes, I have read it.)

You can download PDFs from blackberry.com or even search their knowledge base for 'Folder Redirection' and I'm sure there's some good information there as well.
