I am looking to train some users using a projector and view some MDS applications on large screen, is there a BB emulator to accomplish this?

There are two choices. RIM's simulator or Ikodorros BB viewer. The latter runs from your BB and the former is a PC based simulator. I am going to try the viewer next month in a class. You can find links at BBF to them both by searching. I don't have them handy.
