What time of connection do you have between home and the Exchange server? If you are on the same network then you should be able to, but if you have to vpn or anything crazy like that it might not work. Also you will need to create an account on the Exchange server that has access to the other mailboxes.
IT would "work" but it would be slow and not supported by RIM. The BlackBerry Enterprise Server does use a lot of traffic between the BES and Exchange to do mailbox re-scans and get emails. If you disabled PIM then it would be a little bit better.
What is the PING time between home and Exchange? If it is less they say 70ms then you should be alright. 35ms is the supported from RIM and M$.
