Im pretty sure that you can only tie the BB device to 1 mailbox. At least I have not been able to get it to do 2.
Depending on how many people are using the BB's and where the mail servers are you hsould be able o get away with 1 BB server. I have 3 exchange servers that are very well connected spread across the US and I only have 1 BB server. I have BB users on all 3 exchange servers. It also doens't matter what OU the users are in. The BB server doens't seem to care about the OUs.
