Forgive me if this has been asked before...but can I set my 8120 to not open a new email when I remove it from the case? I'd rather it stay on the home screen.

If such a thing is possible, it would be via the Screen and Keyboard settings in Options, or in the active profile.

Messages is one of the service that constantly runs in the background when you're not using the Berry.

While holstered, a magnet keeps the Berry in a semi-quasi standby mode to keep the display from draining the battery. When you remove it from the holster (if you just heard the tone you've set for messages, for example) the display comes back on and the Berry opens the incoming message.
