My main icons now require 2 clicks to activate ... pretty sure there isn't an option for that so any ideas why its doing that?

Powered on, remove the battery and reboot the device.

Yeah tried that ... well - it reboots itself too so

Running 122 .... very odd - was working great for a few days and now this.

Maybe try switching themes, see what happens then?

Tried pulling the battery and I only have one theme - the default one that came with the phone.

I've tried lowering some screen sensitivity numbers, maybe that will help.
