Cooked software - for added Chinese languages and apps (and maybe more)

I've just started to use my first BB (moved from WinMo platform), where I used to get all kind of mix and match of the feature by 'cooking' my own 'ROM files'.
I wanted to have Chinese language on my BB and I find a lot of different attempts and just want to share my final apporach (it works!!!) on a 8120. It may work on other device as long as the same step and right files are used.
1. Got 8120 files downloaded the T-Mobile file from blackberry site, this is the latest version available for 8120 so I want to use it as the base.
2. Got 8120 files from Singtel with Chinese files from the same place
3. INSTALL #2, copy files in C:\Program Files\Common Files\Research In Motion\Shared\Loader Files\8120-v4.3.0.xxx_P2.6.0.xx to a different location (let's call it "SAVED FILES"); then UNINSTALL #2
4. INSTALL #1
5. download a program called WINMERGE
6. DIFF the two directories under ...\Loader Files\Java, copy all the files that is "MISSING" from the "SAVED FILES\Loader Files\Java" with the Loader files just reinstalled.
7. For langauage "cooking", copy over "SAVED FILES\Loader Files\CJK.alx" also
8. Delete "C:\Program Files\Common Files\Research In Motion\AppLoader\Vendor.xml"
9. Start Desktop manager and use application loader to update your device
After a successful update, the device has all the new TMOBILE setup with the chinese feature listed in the Chinese.alx. EXCELLENT!!
Note: Please note that there is risk to brick your device. I'm happy to help but I do not responsible for any issue cause by this procedure!
Issues:
1. I have only gotten the SIMIPLIFIED CHINESE INPUT working, if anyone has a different files like CJK.alx that has other input methods. I would love to know and try.
2. I tried to add bPhone theme (iPHONE like) and remove some apps like BBMap. I'm looking for other 'must-have' apps so I can create a custom package that I can setup the device exactly the way I want with maximum available storage. Any suggestion is welcome.
I have not even got the push mail all setup yet, but it is fun to know I can play around with the device software!

I think I did a similar procedure to my Tmo 8820 and now I have Chinese character support, but I couldn't find Chinese input method. Even though there's a Pinyin Input method listed in the Application Loader (as well as several others), I couldn't find it anywhere on my BB. Do you know if there's a specific key that can bring up the Chinese input?
