When i change my wallpaper it changes on the home screen...when i hit the "applications" button it doesnt change there...how do i get that screen to change also?

You can't.

The wallpaper only affects the homescreen.

If you want something different, you'll need to find a different theme you prefer.

That's how my Boost Curve 8330 was when on the Boost theme. Change to one of the default BlackBerry themes and you should be able to keep your wallpaper in all the folders.
