To the 3 options:
Device: Your device creates an encryption key on the media card
Security password: This uses the General Security password to encrypt your files (Note this will also cause your device to lock after the timeout)
Security password & device: Obviously both of the above.
Now the way I understand it, if you use the device encryption if your media card is taken out of your device it won't be readable. If you use password encryption it should prompt you for the password.
I've never done this and am guessing on the functionality but I think it's pretty close. As it looks, there is no way to simply password protect your files on the media card without setting the general security password.
