Just upgrade to the official OS 5 and I can't find the setting to have the phone unlock when removed from the holster. I've checked everywhere I can find... what am I missing?

I'm no help to you, my problem is just the opposite. Mine unlocks when I remove it from the holster, and I would like to find out how to change it to not unlock.

Options -> Password -> Lock When Holstering set to No. I don't believe there was ever a setting on the BB to have a device unlock but I tend to lock mine before holstering and unholstering will unlock it using the above setting.

This may be obvious: if you don't have a password set, why lock when holstering?

Setting it to yes does what I want it too. Stays locked till I press the unlock on the top left.
