had a faulty sim so got the provider to replace it but the number has a name attached to it. They say theres no name attached to the sim so it must be on the device.

Where do you assign names to device?
Have added phone number and name to Options Advanced / Sim Card
Have added name to Owner name

When i call from the bb to another phone it displays a named caller id (a user thats left) - how do i remove this?

yes phoned my main line so yes thats naturally on GAL and ive downloaded to my BB so thats why i was getting the name. Prob was in fact the number is with another user & i've received a new sim with this same number for some reason

Good rule of thumb is that CallerID is generally all in CAPS.
