How much downtime when converting SQL 2000 to SQL server

I have 2 VM's (ver 5 MR02) called bberry01 and 02 with 150 users. Since I am using SQL2005 they are not really hot spares. I just use 02 as a backdoor way into besadmin. I have backed up my besmgmt database and given it to my SQL expert who followed the instructions and restored it easily using the Blackberry instructions. We were able to open all the tables, see the information, etc so the procedures are good.
Summer is a time when i can take the system down a bit and convert to SQL. The directions seem to say(roughly)- backup besmgmt, stop the services, migrate the backup to SQL, stop all sevices and point the database to the SQL server. That would "seem" to take only about 20 minutes. The question is
a.) Could i do the Besmgmt backup and convert an hour or so ahead of time? Would I miss any transactions(I dont think so).
b.) How soon would the devices work after i pointed them to the new SQL server.
The strange thing is that everything works so well now i am afraid to do it. However if I had a hot spare(using SQL) i could do service pack and MR upgrades easily without downtime.
Any advice would be appreciated.
