In a nutshell, if you want GPS, media support, voice activated dialing, and/or microSD storage then the 8800 is a pretty clear cut choice. If those features don't matter much to you and you believe that the 8800's build quality is questionable like some do then the 8700 is probably a better choice. I don't see how anyone can meaningfully determine that there are real build quality issues with the 8800. People also seem to forget that there were tons of "build quality" concerns voices with the release of the 8700 which were very similar to what we're seeing voice about the 8800. If you look you'll find complaints about the 8700's battery door and the keyboard to this day. Heck, the entire lower half of my 8700 creaks...
Most people seem to be able to adapt to the 8800's keyboard but you might want to give it a spin for yourself. Some people can't or won't adapt.
